Ingredients
1 ½ cup broccoli florets, steamed
1 cup reduced fat cheddar cheese
1 egg
½ cup nonfat milk
¾ cup whole wheat pastry flour
½ Tbsp. baking powder
2 Tbsp. lite margarine, melted
1 tsp. black pepper
Method
Preheat oven to 375°F and spray a muffin pan with nonstick spray.
Place broccoli florets in a food processor and process into fine chunks.
In a large bowl, combine all ingredients. Mix until well combined.
Pour mixture into muffin pan, making 8 muffins total. Bake for 20 minutes.
